Sayur nangka adalah salah satu jenis pengolahan nangka dengan cara disayur menggunakan kuah santan. Olahan sayur nangka, banyak ditemukan dalam berbagai kuliner daerah yang ada di Indonesia mulai dari kuliner Minangkabau atau Padang, kuliner Sunda, dan kuliner Jawa. Dalam kuliner Jawa, sayur nangka sering disebut dengan nama jangan tewel . Sedangkan dalam kuliner Sunda disebut angeun nangka . Sementara di kuliner Padang, disebut gulai nangka. Umur buah nangka yang digunakan dalam sayur nangka biasanya nangka muda atau setengah tua, yang juga sering digunakan dalam pemasakan gudeg khas kuliner Yogyakarta. Ciri khas sayur nangka pada ketiga kuliner yaitu Minangkabau, Sunda, dan Jawa yaitu menggunakan santan kelapa.
